Rant: My buddy said my chocolate chip cookies tasted like 'sweet cardboard' and honestly he was right
So last weekend I brought a batch of cookies to a potluck in my buddy Dan's garage and he took one bite and just goes 'dude these taste like sweet cardboard.' I wanted to be mad but he was right, they were flat and dry and kind of sad. He said his mom always pulls her cookies out when the centers still look a little underdone, like glossy and almost wet in the middle, and lets them finish on the hot sheet for 5 more minutes. I tried it Tuesday with the same recipe I've used since I was like 19 and it was a totally different cookie, soft in the middle, chewy edges, my wife ate four in one sitting. The trick is you gotta ignore the timer on the bag and trust your eyes instead, because ovens run hot or cold and my old one was lying to me for years. I also started weighing my flour with a $12 kitchen scale instead of scooping and that helped a ton too. Dan came over Thursday and had one and just nodded, which from him is basically a standing ovation. Anyone else get a random cooking tip from a friend that made you rethink a recipe you thought was fine?
