My cold brew ratio quest finally hit a wall after 4 batches

Tbh, I spent last week obsessing over a 1:8 coffee to water ratio for cold brew, watched three videos, and every batch came out either sour or watery. Then I realized my tap water in Austin is way harder than what those baristas use, so I switched to filtered bottled water and it fixed everything overnight. Has anyone else had their local water totally wreck a brew recipe, or am I just late to this problem?
