Bitter vs. bright, why does everyone assume dark roast has more caffeine?
I read on a coffee science blog last week that light roasts actually keep more caffeine since the roasting process burns some off, which pretty much flips what I thought for 10 years. Which side do you trust, the caffeine chart or your own jitter test after switching roasts?
Wait, the roast level actually burns off caffeine? That blows my mind because I've been buying dark roast for years thinking I was getting more kick. My husband drinks light roast and I always teased him about his "weak" coffee, but now I'm wondering if he's been more wired than me this whole time. I need to go read that blog because this changes everything I thought I knew about my morning cup.
