Update: I went with a continuous brew kombucha setup over batch brewing

Everyone in my local group swears by the batch method, saying it's easier to control. I set up a continuous system with a 2-gallon jar and a spigot about 4 months ago. It's been way better for my routine because I can pull a liter to bottle every 4 days without starting from scratch. My SCOBY is super healthy and the flavor is more consistent now. Has anyone else made this switch and found it less fuss than people claim?

How do you keep the spigot from getting gunky? I had that issue at first... switched to a stainless steel one and run hot water through it after each pull. Totally fixed it.

My friend's brewery uses a similar hot water rinse trick.

Nice. People get weird about their brewing methods. @the_alice, your friend's brewery has the right idea with keeping things simple. Continuous brew is just less work once you dial it in.
