Banana bread recipe I've used for 15 years failed me yesterday
My grandma's banana bread turned into a soggy brick after I swapped butter for applesauce thinking I'd make it healthier - never again. Has anyone else ruined a beloved family recipe by trying to 'improve' it?

Oh man, I've been there! I once swapped oil for mashed banana in a muffin recipe and ended up with what I can only describe as dense banana-flavored hockey pucks. In my experience, those ingredient swaps sound like a good idea until you're staring at a ruined dish, wondering what went wrong.

I tried subbing yogurt for sour cream once and ruined a whole pot of soup.

Honestly, I used to be one of those people who swore swaps never ruined anything, but your soggy brick story totally changed my mind.
