Tried patching a hole in my drywall three times last Tuesday and it still looks like a crater.
Even bought the $14 mesh patch kit from Ace Hardware and followed every step on the YouTube tutorial but now I'm wondering if I should just hang a giant painting over it, has anyone else had this much trouble with spackle?

I feel you on that "crater" line because my first patch job looked like the moon landing site. It's funny how things that look so simple online turn into a whole project. I've noticed that with a lot of stuff around the house, like the YouTube guy makes it look like it'll take 15 minutes but then you're on hour three with spackle stuck to your fingers. The giant painting is a tried and true move though, I have a poster covering up a botched outlet swap from two years ago and it works great.

But didn't you sand it smooth between coats? That's the step everyone skips and it makes all the difference. I had the same problem until I started using a damp sponge to feather the edges.
