Pro tip: my friend pointed out my pour-over technique was way too fast
He watched me make a cup and said, 'You're rushing the bloom, it needs a full 45 seconds to let the coffee degas.' Slowing that part down completely fixed the sour taste I was getting. Anyone else have a simple tip that made a big difference in their brew?

Oh man, I read somewhere that your grind size should look like coarse sand, not powder. I was using a cheap grinder and it was way too fine, made my coffee super bitter every time. Switched to a better setting and it was like a totally different drink. That one detail changes everything.

Yeah, that bloom time is key! I started paying more attention to my water temp too, and it helped a ton.
