I finally figured out why my pour-over was always bitter after 3 months of frustration
Turns out I was grinding my beans too fine because my cheap burr grinder was calibrated way off, so I spent $15 on a new one and now my morning coffee actually tastes smooth instead of like burnt toast. Has anyone else had a grinder secretly sabotage their whole routine?

Yeah that "burnt toast" issue is real, a bad grinder will wreck your whole morning.

Buy a cheap hand grinder before you go electric, seriously (like a Hario Mini Mill or something similar). It costs about the same as a bad electric one but gives you way more control over your grind size. I switched to a manual grinder for a year and it totally fixed my "toast" problem, just takes a minute longer in the morning. If you really want electric, save up for a Baratza Encore because the cheap blade grinders just turn your beans into dust. Trust me on this one, your morning coffee will thank you.

Did I write this post in my sleep? I spent two months blaming my tap water before I found out my "precision" grinder was basically just a blender with delusions of grandeur.
