Unpopular opinion: a $12 plastic bench scraper beats a $75 Japanese knife for 90% of prep station tasks

I used a cheap one for a month in a busy Philly kitchen and it just moves product faster with zero maintenance. Anyone else ditch the fancy tools for something basic that just works better?

Ever try to get that old marker off without messing up the wood? I mean, a tiny bit of rubbing alcohol on a cloth might do it, but honestly, I'd just leave it. That's the good part, you know? It's proof it was really yours. My mom's old rolling pin has my brother's initials carved in it and we'd never change it.
