I keep seeing line cooks at my spot in Chicago use a dull knife to open boxes and it drives me nuts.

The supply closet at my last gig had a roll of packing tape with a built-in blade. We stuck it right by the dish pit so it was always there. Took away any excuse to grab a knife.

My old chef in Milwaukee had a rule, you touch a knife to cardboard and you owe the house a new blade. He said a single pass through a box can ruin the edge. Seeing that happen in a Chicago kitchen would make my eye twitch. Why not just grab a box cutter from the dry storage area?

@rodriguez.felix, it's also a huge safety risk when a knife slips on cardboard.
