Thinking about how my 'fancy' dinner last week was just a $3 pack of chorizo and some eggs

Three years ago, I'd have called that a struggle meal, but after seeing prices at the store in Boise last month, I'm just calling it smart cooking now, anyone else find themselves redefining what a 'good' meal is?

My buddy just bragged about his "gourmet" canned tuna on toast.

Honestly it's made me better at cooking. You learn to make simple things taste great when that's the plan, not the backup. Feels like a real skill now.

Takes real skill to make something simple taste good. Most people just dump sauce on everything. Learning to season right, get the texture right, that's where it's at. I'd take a well made grilled cheese over some fancy restaurant plate any day.
