That $40 silicone baking mat warped on my first batch of cookies
Bought a cheap mat online thinking it would save on parchment paper, but after one batch at 375 it curled up and slid off the pan. How do you keep those thin mats from moving around?

Oh, did your friend's mat do the same thing mine ended up returning? Except hers got all crinkly and then started smoking in the oven, which was real scary. @sarah_mason is right about the heat distribution thing, but honestly the worst part was the smoke alarm going off while she was trying to impress her new neighbors with cookies. She learned that thin mats are basically just fancy plastic that can't handle real heat, so now she just uses parchment paper she already has in the drawer. Sometimes sticking with what works is better than trying to save a few bucks on something that'll just fail anyway.

My $8 mat from the grocery store did the exact same thing last week, curled up like a potato chip right around the 10 minute mark. It got me thinking about how we're always trying to beat the system with the cheapest option (you know, like buying the off-brand trash bags that split open). But with cooking stuff especially, you really do get what you pay for. The thin mats just don't have enough heft to stay flat, whereas the thicker ones with fiberglass inside actually stay put. It's the same pattern with everything from spatulas to measuring cups - the flimsy stuff always lets you down when you need it most.
