My blind-bake crust slid right off the pan mid-pour
I was making a lemon meringue pie for a potluck in Portland last Saturday, and I pulled the blind-baked shell out to cool, then I poured the hot filling in and the whole crust shifted sideways like it was on a skating rink. Turns out I forgot to dock the dough with a fork before baking, so it puckered up and lost its grip on the pan. Anyone else had a crust just detach during the fill step, or was this just my own dumb mistake?
Did you at least get a video of the crust noping out before you poured the filling? That sounds like the kind of graceful disaster I’d wear on a t-shirt. I once had a graham cracker crust crumble into the filling and turn my cheesecake into a swamp, so I feel your pain. The fork docking thing is one of those steps I skip when I’m in a hurry, and it always bites me later. At least you caught it before the lemon goo glued everything to the floor of your oven.
