Appreciation post: That batch of cinnamon rolls I almost tossed in the trash
Last Tuesday I was making cinnamon rolls for a church bake sale and the dough just would not rise after 2 hours, so I almost gave up and threw the whole bowl out. I stuck it in the warming drawer on a whim and came back 45 minutes later to find it had doubled in size, and the rolls turned out fluffier than any I've ever made. Has anyone else had a bake that looked like a total loss but somehow came together in the end?

Got a story for you. Last year I tried making homemade croissants for the first time and the butter kept leaking out of the dough. It was a huge greasy mess all over my counter and I was ready to cry. But I folded it up anyway and baked it. The croissants came out all flaky and delicious, just looked a little funny with the butter pools. Sometimes you just gotta trust the process even when everything looks wrong.

Stella, that's basically a metaphor for half the stuff I try to bake. Butter leaking everywhere, dough sticking to everything, and you just gotta roll with it. It's wild how the ugly ones usually taste the best, like the universe rewarding you for not giving up.
