Hot take: the guy at the farmers market bakery booth in Fresno told me my crumb was "too even" and I can't stop thinking about it
I was buying a loaf from him Saturday and mentioned I'd been chasing that super uniform open crumb everyone posts online, and he just shook his head. He pulled out one of his own loaves and showed me how the holes get bigger near the top and tighter at the bottom, and he said that's from how the dough actually moved in the oven, not from a bad mix. He told me perfectly even holes usually mean the dough was overproofed and just sat there instead of springing. Now I'm looking at every loaf I pull out of my oven wondering if I've been aiming for the wrong thing this whole time. Has anyone else had someone tell them their bread was too perfect and meant it as a bad thing?
