Started roasting my broccoli at 375 instead of 400 and it's way better without burning
I used to crank it up high and get sad, chewy edges, but dropping the temp by 25 degrees gave me crispy, tender pieces in 12 minutes flat, has anyone else found a veggie that hates high heat?

Yeah "sad chewy edges" hit home. I do my carrots at 375 too, gives them time to caramelize without turning into charcoal. Brussels sprouts are the same way for me, high heat makes them bitter but low and slow gets them sweet.

Oh MAN this is SO true. My friend Jenna tried to get fancy with brussels sprouts at 425 once because some blog said high heat was the way. She pulled them out and they were practically CRISPS on the outside and still raw in the middle. Tasted like burnt rubber mixed with grass clippings. She ended up tossing the whole sheet and ordering pizza instead.
