My air fryer wings finally got crispy after 4 batches of sad floppy skin
I've been trying to get restaurant style crispy wings in my air fryer for months and kept ending up with rubbery skin no matter what temperature I tried. Last night I finally tried tossing them in a tiny bit of baking powder and letting them sit uncovered in the fridge for 2 hours before cooking. Has anyone else had luck with that trick or do you do something different?

The baking powder trick is legit, but I actually take it a step further and mix a tiny amount of cornstarch in with the baking powder. It sounds weird, but it gives an even crispier, almost crackly skin without making it taste powdery. Also, I found that patting them bone dry with paper towels before the fridge rest makes a bigger difference than the time in the fridge itself. If you're still getting floppy spots, try cranking the air fryer to 400 right at the end for the last 2-3 minutes.

See what you're sayin @williamm82 but the fridge dry works fine for me without cornstarch.
