My grandfather's pour over advice finally clicked 15 years later
He told me back in 2009 to stop using boiling water. I was 22 and thought he was just old school. Used a fancy electric kettle with temp control at 212 anyway. Coffee always tasted bitter and I blamed the beans. Switched to a cheap thermometer and started aiming for 200 degrees about 3 months ago. Same beans, same grinder, totally different cup. He never said 'I told you so' when I mentioned it, just nodded. Has anyone else ignored older family advice that turned out to be spot on?

Grandpa sounds like he knew what he was talking about, that's for sure. My own grandmother had a trick for keeping bread from going stale, wrapped it in a damp towel on the counter, and I ignored her for years until I finally tried it. Same result, she just gave me that little knowing smile too. It's kind of humbling when the old ways turn out to be the right ways, but at least we get there eventually...
